Sweet n Sour style Pork

A lot of my inspiration comes from slimming world recipes which I like to “Emmarise” (Mr F’s definition: tweak ingredients to suit Emma’s taste). 

Tonight’s dinner was my take on the Slimming World Fanta chicken recipe…. Only using pork OBVS!!  

  500g lean diced pork

2 small carrots (finely sliced 1″ long)
1 red onion chopped 
1 red pepper chopped
1 can diet fanta
Garlic granules
Celery salt
Chinese 5spice
Smoked paprika

Soy sauce (I use light & dark)

Spray a large pan with frylight & fry onions & carrots for 5 mins till softening. Add pork & spices and continue to fry for 2-3 mins. Add fanta and continue to cook for 5 mins. Add Passata and soy sauce then simmer for 20 mins…

Serve with boiled rice or noodles (or both if you can be bothered with the extra pan to wash lol)
