Chicken, Red Pepper & Spinach Curry recipe – syn free

Chicken, Red Pepper & Spinach Durban Curry

Chicken breasts
Durban curry spice blend (got mine from tesco – no added oil, just spices so assuming syn free)
Garlic & ginger (I use RAJ frozen cubes from asda)
Chicken stock pot
Onion diced
Red pepper diced
Bag of fresh spinach
Passata (I prefer napolina)
Chilli flakes (optional)

Throw all the ingredients into the slow cooker, stir & cook for 6 hours on low. Once cooked the chicken breasts will break down on stirring.

Tip: only add half the pack of spinach now, then add the rest part way thru cooking (anytime up to 30 mins before serving) 

Serve with pilau rice & a handful of low fat oven chips (it is a Saturday night afterall)
