Syn Free Curry Muffins
1 pack savoury rice (I used batchelors mild curry old 120g pack – syn free)
1 tin chic pea dahl (asda, tesco, aldi, morrisons – all syn free. Avoid sainsbury’s, it’s 8 syns)
frozen sliced peppers (defrosted)
Cook rice (cover with boiling water & cook for 10 mins in microwave – add more water during cooking time as required)
Add 4 eggs, chic pea dahl & sliced peppers. Season & mix well.
Spray sillicone muffin tins with frylite and fill with mixture.
Bake in pre heated oven @ 180-200* for 30-40 mins till golden & firm to touch…
Makes tasty lunch with salad or add pickled gherkins, onions & chilli’s for super tasty speedy side dish..
PERFECT for snacking on the go when off to concerts for example 😜
