Breakfast Quiche

I have a brilliant job which I love but as I start at 7am breakfast needs to be planned… My breakfast quiche is a great choice! I make it on a Sunday afternoon (my favourite time for batch cooking, my way of relaxing). 

Here’s one I made earlier..

Breakfast Quiche
4 slices bacon – fat removed & chopped
2 slimming world sausage – defrosted and sliced
4 spring onion – chopped
Frozen sliced mushrooms
Frozen sliced peppers
4 medium eggs
1 tub fat free cottage cheese (I used aldi’s onion & chive)
1 tomato – sliced
Black pepper

Preheat oven to 200*

Spray a frying pan with frylite (I used garlic flavoured) and add the bacon, sausage & spring onion and fry for 5 mins, add frozen mushroom & peppers and fry for few more mins (at least til defrosted).. Drain excess fluid from pan and spread evenly in an oven proof dish.

Meanwhile, beat the eggs, add cottage cheese and plenty of black pepper (to suit your own taste) and mix well. Pour mix over the ingredients in the dish and top with sliced tomato’s.

Bake in the middle of pre-heated oven for 30-40 mins til set and golden brown on top. 

SYN FREE & will divide into 4 portions! Great for breakfast or just to snack on…
